Banana & Peanut Ice Cream

This is one of the easiest and tastiest peanut ice cream recipes. Frozen ripe bananas are blitzed until creamy. For this, a powerful blender produces a better result than a food processor. The bananas will go through various transformations: crumbly, gooey, looking like oatmeal and finally the consistency of soft-serve ice cream.

Ingredients
- 4 large ripe bananas, peeled, cut into chunks & frozen
- 1⁄4 cup (70g) crunchy peanut butter
- 1⁄4 cup (60mL) runny honey
- 2⁄3 cup (190g) natural yoghurt
- 1⁄3 cup (50g) chopped
- roasted peanuts
Method
- Put the banana in a blender and blitz until smooth and creamy. (Because the bananas are frozen solid this is a noisy process.) When the mixture is smooth, add the peanut butter, honey, yoghurt and peanuts, then pulse-blend. Pour the mixture into a freezer-proof container, cover with lid and freeze. This will keep for up to 2 months.
Tip: If you like, replace the chopped roasted peanuts with 1⁄2 cup (80g) of blueberries.
